Here is a vegetarian twist of a classic taco combo.

Ingredients

  • 1lb. veggie mince
  • 14oz. can of black beans, rinsed
  • 12oz. tomato sauce
  • 2 teaspoons smoked paprika
  • 2 teaspoons ground cumin
  • ½ onion, chopped
  • 5 tablespoons BBQ sauce
  • 1 avocado, peeled, stoned, sliced
  • 2 teaspoons vegetable oil
  • 8 taco shells
  • 4 tablespoons water
  • Fresh coriander, 1 tbsp., chopped
  • Lettuce, ½ cup, shredded
  • Salt ½ tsp.

Method

  1. Heat the vegetable oil in a skillet. Add in the onion and cook for 5 minutes or until tender.
  2. Add smoked paprika and cumin. Cook for 1 minute or until fragrant.
  3. Add the veggie mince and season to taste. Cook until fully heated through (about 3 minutes on high)
  4. Add the water, tomato sauce, and BBQ sauce. Bring to boil and reduce heat to medium. Simmer until the sauce is reduced and sticks to the meat.
  5. Add the beans and then cook for 2 minutes more. Stir in the coriander and remove from the heat.
  6. Fill the taco shells with prepared mixture and top with lettuce and avocado.
  7. Serve immediately.
