Here is a vegetarian twist of a classic taco combo.

Ingredients
- 1lb. veggie mince
- 14oz. can of black beans, rinsed
- 12oz. tomato sauce
- 2 teaspoons smoked paprika
- 2 teaspoons ground cumin
- ½ onion, chopped
- 5 tablespoons BBQ sauce
- 1 avocado, peeled, stoned, sliced
- 2 teaspoons vegetable oil
- 8 taco shells
- 4 tablespoons water
- Fresh coriander, 1 tbsp., chopped
- Lettuce, ½ cup, shredded
- Salt ½ tsp.
Method
- Heat the vegetable oil in a skillet. Add in the onion and cook for 5 minutes or until tender.
- Add smoked paprika and cumin. Cook for 1 minute or until fragrant.
- Add the veggie mince and season to taste. Cook until fully heated through (about 3 minutes on high)
- Add the water, tomato sauce, and BBQ sauce. Bring to boil and reduce heat to medium. Simmer until the sauce is reduced and sticks to the meat.
- Add the beans and then cook for 2 minutes more. Stir in the coriander and remove from the heat.
- Fill the taco shells with prepared mixture and top with lettuce and avocado.
- Serve immediately.
