Ingredients

  • Duck Breast (1 lb., boneless, thinly sliced)
  • Cumin (1 tsp., ground)
  • Olive oil (3tbsp.)
  • 1 onion, diced
  • Bell pepper (1 yellow, seeded and diced)
  • 1 red bell pepper, seeded and diced
  • 2 garlic cloves, minced
  • 2 Roma Tomatoes seeded and diced
  • ½ teaspoon salt
  • 12 corn tortillas
  • 4 tablespoons fresh chopped cilantro
  • 1 poblano Chile
  • ½ lime, juiced
  • 1 teaspoon chipotle Chile
  • ½ teaspoon dried Mexican oregano
  • 1 teaspoon ground cumin
  • 1 tbsp. Cilantro, chopped

Method

  1. Combine cumin, chipotle, oregano and some salt in a bowl.
  2. Rub the duck with 1 tbsp. olive oil then rub with the spice mix. Drizzle with lime juice and place aside.
  3. Preheat grill pan over medium-high heat.
  4. Heat remaining olive oil in a grill pan. Add onions, bell peppers, tomatoes and Chile pepper. Cook for 4-5 minutes.
  5. Add garlic and continue to cook for 4 minutes more.
  6. Remove from the heat and stir in cilantro and season to taste.
  7. Grill the duck for 5 minutes per side. Remove from the grill and let rest for 5 minutes.
  8. Slice duck and layer with prepared veggies and cilantro over tortillas.
