Ingredients
- Duck Breast (1 lb., boneless, thinly sliced)
- Cumin (1 tsp., ground)
- Olive oil (3tbsp.)
- 1 onion, diced
- Bell pepper (1 yellow, seeded and diced)
- 1 red bell pepper, seeded and diced
- 2 garlic cloves, minced
- 2 Roma Tomatoes seeded and diced
- ½ teaspoon salt
- 12 corn tortillas
- 4 tablespoons fresh chopped cilantro
- 1 poblano Chile
- ½ lime, juiced
- 1 teaspoon chipotle Chile
- ½ teaspoon dried Mexican oregano
- 1 teaspoon ground cumin
- 1 tbsp. Cilantro, chopped
Method
- Combine cumin, chipotle, oregano and some salt in a bowl.
- Rub the duck with 1 tbsp. olive oil then rub with the spice mix. Drizzle with lime juice and place aside.
- Preheat grill pan over medium-high heat.
- Heat remaining olive oil in a grill pan. Add onions, bell peppers, tomatoes and Chile pepper. Cook for 4-5 minutes.
- Add garlic and continue to cook for 4 minutes more.
- Remove from the heat and stir in cilantro and season to taste.
- Grill the duck for 5 minutes per side. Remove from the grill and let rest for 5 minutes.
- Slice duck and layer with prepared veggies and cilantro over tortillas.
