Ingredients

  • Tofu (1lb., extra firm, cut into cubes)
  • Salt (1 tsp.)
  • Black Pepper (1/2 tsp.)
  • Olive Oil (1 tbsp.)
  • Pineapple (2 cups, chopped)
  • Purple Cabbage (1 cup, shaved)
  • Chilli Pepper (1/2, red, sliced)
  • Taco Shells (8, 6 in shells)
  • Cilantro (2 tbsp., chopped)

Method

  1. Generously season tofu with your salt and pepper. Set a large skillet over high heat and cook tofu pieces for about 2 minutes per side.
  2. Using the same skillet toss your pineapple and chili slices until pine becomes tender (should take about 5 to 7 minutes).
  3. Once tender, begin assembly by layering cabbage, tofu, and pineapple in your taco shells. Top with cilantro.
  4. Serve and Enjoy!
