Here is yet another way to enjoy a healthy breakfast taco.

Ingredients
- Tofu (8 oz., medium firm, crumbled)
- Salt (1/2 tsp.)
- Black Pepper (1/4 tsp.)
- Butter (1 tbsp., unsalted)
- Tortillas (4, warmed)
- Avocado (1/2, thinly sliced)
- Salsa (1/4 cup)
- Monterey Jack Cheese (1 oz. shredded)
- Cilantro (2 tbsp., chopped)
Method
- Season tofu in a medium bowl with salt and pepper.
- In a large non-stick skillet over medium heat set your butter to melt, then cook your tofu (stirring constantly) until cooked (should take about 3 minutes).
- Begin assembly by layering tofu, salsa, avocado, cheese, and cilantro.
- Serve and Enjoy.
