Ingredients

  • Tofu (8 oz., medium firm, crumbled)
  • Salt (1/2 tsp.)
  • Black Pepper (1/4 tsp.)
  • Butter (1 tbsp., unsalted)
  • Tortillas (4, warmed)
  • Avocado (1/2, thinly sliced)
  • Salsa (1/4 cup)
  • Monterey Jack Cheese (1 oz. shredded)
  • Cilantro (2 tbsp., chopped)

Method

  1. Season tofu in a medium bowl with salt and pepper.
  2. In a large non-stick skillet over medium heat set your butter to melt, then cook your tofu (stirring constantly) until cooked (should take about 3 minutes).
  3. Begin assembly by layering tofu, salsa, avocado, cheese, and cilantro.
  4. Serve and Enjoy.
