This sweet potato cream soup is incredibly delicious. You can serve it for lunch or even at dinner time. Either way, your family and guests will be impressed. Even the pickiest eaters will lick their plates clean!

Ingredients
- 35 oz. sweet potatoes
- 4 cups vegetable broth
- 2 shallots
- 2 tbsp. extra virgin olive oil
- 2 tbsp. butter
- 5 oz. liquid sour cream
- ½ tsp. chili powder
- ½ tsp. sweet paprika powder
- 4 slices of bacon
- a pinch of salt and pepper
Method
- Chop the shallots and then fry them in olive oil and butter.
- Meanwhile, peel the sweet potatoes and then dice them
- When the shallots become tender, add the diced potatoes and the vegetable broth.
- Add salt and pepper to taste and cook for about 20 minutes, until the potatoes are tender.
- Transfer everything into a food processor and blend (or use a hand blender).
- Mix the sweet potato cream with the sour cream, paprika, chili powder and add more salt and pepper, if needed. If the soup is too thick, add more vegetable broth.
- Separately, fry the bacon in a pan until crisp.
- Serve the sweet potato cream soup with a slice of bacon on top, extra sour cream and a pinch of paprika.
