Sweet Potato Bruschettas
Try these quick and easy sweet potato bruschettas. You can prepare them using the topping of your choice, or follow the recipe for a guaranteed delicious effect.

Ingredients
- 1 large sweet potato
- 4 oz. Cheddar cheese
- 1 tomato
- 1 red onion
- 4 oz. avocado
- 2-3 tbsp. extra virgin olive oil
- 1 tsp. dry rosemary
- a pinch of salt and pepper
Method
- Wash the sweet potato and then slice it thin.
- In a large bowl, coat the potato slices with some olive oil, rosemary, salt and pepper to taste.
- Transfer the potato slices in an oven tray, coated with baking paper, and bake at 400F for about 20 minutes.
- Meanwhile, slice the cheese and dice the avocado pulp, tomato and red onion.
- Take the potatoes out of the oven and add a slice of cheese on each.
- Resume baking for a few more minutes, at 220F, until the cheese starts to melt (about 5 minutes).
- Take the sweet potato bruschettas out of the oven, top them with diced avocado, tomato and onion and serve.
