Ingredients

  • 1 large sweet potato
  • 4 oz. Cheddar cheese
  • 1 tomato
  • 1 red onion
  • 4 oz. avocado
  • 2-3 tbsp. extra virgin olive oil
  • 1 tsp. dry rosemary
  • a pinch of salt and pepper

Method

  1. Wash the sweet potato and then slice it thin.
  2. In a large bowl, coat the potato slices with some olive oil, rosemary, salt and pepper to taste.
  3. Transfer the potato slices in an oven tray, coated with baking paper, and bake at 400F for about 20 minutes.
  4. Meanwhile, slice the cheese and dice the avocado pulp, tomato and red onion.
  5. Take the potatoes out of the oven and add a slice of cheese on each.
  6. Resume baking for a few more minutes, at 220F, until the cheese starts to melt (about 5 minutes).
  7. Take the sweet potato bruschettas out of the oven, top them with diced avocado, tomato and onion and serve.
