Ingredients
- Italian Sausage (1lb., chopped)
- Salt (1 tsp.)
- Black Pepper (1/2 tsp.)
- Olive Oil (1 tbsp.)
- Pineapple (2 cups, chopped)
- Garlic (2 cloves, minced)
- Onion (1/2 cup, chopped)
- Hot Pepper Sauce (1/2 tsp.)
- Taco Shells (8, 6 in shells)
- Cheddar Cheese (4 oz. shredded)
- Roma Tomatoes (3 seeded chopped)
- Cucumber (1 cup, seeded and chopped)
- Jalapeno Pepper (2, seeded and chopped)
- Cilantro (1 tbsp. chopped)
- Brown Sugar (1 tbsp.)
Method
- In a medium bowl, combine pineapple, cucumber, ¼ cup onion, tomatoes, peppers, brown sugar, and cilantro to create a salsa. Set aside to refrigerate until ready for assembling.
- Generously season sausage with salt and pepper. Set a large skillet over medium heat with olive oil and add sausage pieces, garlic, and onion to brown (should take about 5 – 8 minutes depending on the size of your sausage pieces).
- Once browned pour off excess juices and add your pepper sauce.
- Begin assembly by layering sausage and pineapple salsa in your taco shells. Top with cheese and cilantro.
- Serve and Enjoy!
