Ingredients
- 14 oz. potatoes
- 7 oz. all purpose flour
- 1 tbsp. instant dry yeast
- 1 egg
- a pinch of salt
- 4 cups vegetable oil (for frying)
- 4 oz. ham
- 4 oz. cheddar cheese
- ½ tsp. oregano
Method
- Boil the potatoes in their skin until tender.
- When done, peel them and then mash them in a large bowl.
- Mix the potatoes with the flour, yeast, egg and a pinch of salt, until you obtain a smooth dough.
- Let the dough rest for a few minutes while you prepare the stuffing.
- Dice the ham and the cheese and then mix then with the oregano, in a small bowl.
- Next, spread the potato dough on your work surface and, using a large round cookie cutter, cut about 16 round discs.
- On top of 8 discs, divide the stuffing using a teaspoon.
- Place the remaining 8 discs on top, making sure to seal the margins well.
- Deep fry the potato bombs in hot vegetable oil, until brown on all sides.
- Drain the excess oil when they’re ready and then serve them warm.
