Ingredients

  • 8 small potatoes
  • 4 oz. smoked ham
  • 2 tbsp. chopped parsley
  • 5 oz. Cheddar cheese
  • 2 oz. butter
  • a pinch of salt and pepper

Method

  1. Wash the potatoes in their skin, dry them well and then place them in an oven tray coated with baking paper.
  2. Bake the potatoes at 400F for about 1 hour, until tender.
  3. Meanwhile, dice the ham and cheese and then melt the butter.
  4. When the potatoes are ready, take them out of the oven and gently, cut them in half. Leave the skin on.
  5. Using a teaspoon, scoop some of the potato pulp out and then drizzle the inside of the halved potatoes with melted butter.
  6. Resume the baking process, for another 10 - 15 minutes.
  7. Meanwhile, fry the ham until crisp.
  8. When the potatoes are ready, take them out of the oven again, sprinkle them with salt and pepper to taste and then stuff them with the cheddar cheese and crisp ham.
  9. Resume the baking process for another few minutes, until the cheese melts.
  10. Serve the stuffed potatoes immediately, while hot.
