Ingredients
- Olive Oil (1 tbsp.)
- Canola Oil (3 tbsp., for the grill)
- Salmon (4, 6oz. fillets)
- Coriander (1 tsp., ground)
- Salt (1 tsp.)
- Black Pepper (1/2 tsp.)
- Red Cabbage (1 cup, shaved)
- Avocado (2 large halved and diced)
- Lime juice (2 tbsp.)
- Tortillas (8, warmed)
- Feta Cheese (1/4 cup crumbled)
Method
- Set grill to high and allow to heat up. Once hot, sprinkle with canola oil. Sprinkle fish with ½ tsp. Salt, coriander, and ¼ tsp. Pepper then allow cooking on the grill until fully cooked (about 2 minutes per side). Cut into strips.
- Combine avocado, oil, lime juice, along with your remaining salt and pepper toss and set aside.
- Begin assembly by layering fish, red cabbage, avocado salsa and feta cheese.
- Serve and Enjoy.
