Ingredients

  • Olive Oil (1 tbsp.)
  • Canola Oil (3 tbsp., for the grill)
  • Salmon (4, 6oz. fillets)
  • Coriander (1 tsp., ground)
  • Salt (1 tsp.)
  • Black Pepper (1/2 tsp.)
  • Red Cabbage (1 cup, shaved)
  • Avocado (2 large halved and diced)
  • Lime juice (2 tbsp.)
  • Tortillas (8, warmed)
  • Feta Cheese (1/4 cup crumbled)

Method

  1. Set grill to high and allow to heat up. Once hot, sprinkle with canola oil. Sprinkle fish with ½ tsp. Salt, coriander, and ¼ tsp. Pepper then allow cooking on the grill until fully cooked (about 2 minutes per side). Cut into strips.
  2. Combine avocado, oil, lime juice, along with your remaining salt and pepper toss and set aside.
  3. Begin assembly by layering fish, red cabbage, avocado salsa and feta cheese.
  4. Serve and Enjoy.
