Ingredients
- 70 oz. potatoes
- 2 shallots
- 1 chili pepper
- 1 tsp. dry thyme
- 1 tbsp. butter
- 3 tbsp. extra virgin olive oil
- a pinch of salt and pepper
Method
- Peel the potatoes and then slice them using the mandoline.
- Brush a heat resistant tray with some oil and some melted butter.
- Transfer the potatoes into the tray, aligning them gently.
- Chop the shallots and place them into the tray as well, wherever they fit in between the potatoes.
- Chop the chili pepper and, after removing the seeds, sprinkle it on top of the potatoes.
- Drizzle the remaining oil and melted butter on top and bake at 400F for about 1 hour.
- When ready, sprinkle with thyme, salt and pepper to taste, resume baking for another 15 minutes and then serve.
