These tacos are simply heavenly.

Ingredients
- 3lb. quail cut into halves
- 1 cup orange juice
- ¼ cup grapefruit juice
- 4oz. ancho paste
- 1/3 cup fresh lime juice
- 12 Warmed taco shells
- 1 large avocado (chopped)
- 6 oz. Feta (crumbled)
Method
- Combine ancho pastes with juices in a food blender.
- Process for 2 minutes or until smooth. Strain into a bowl.
- Grease 6-quart Dutch oven with some oil. Add the quail and pour over prepared sauce.
- Cover the quail with a piece of parchment paper. Place the pot over medium heat and bring the sauce to boil.
- Reduce heat to medium-low and cook, covered for 45 minutes.
- Remove the paper, pull the meat from quail and divide it among taco shells.
- Top with cooking juices, avocado, and feta.
- Serve and Enjoy!
