Ingredients

  • 3lb. quail cut into halves
  • 1 cup orange juice
  • ¼ cup grapefruit juice
  • 4oz. ancho paste
  • 1/3 cup fresh lime juice
  • 12 Warmed taco shells
  • 1 large avocado (chopped)
  • 6 oz. Feta (crumbled)

Method

  1. Combine ancho pastes with juices in a food blender.
  2. Process for 2 minutes or until smooth. Strain into a bowl.
  3. Grease 6-quart Dutch oven with some oil. Add the quail and pour over prepared sauce.
  4. Cover the quail with a piece of parchment paper. Place the pot over medium heat and bring the sauce to boil.
  5. Reduce heat to medium-low and cook, covered for 45 minutes.
  6. Remove the paper, pull the meat from quail and divide it among taco shells.
  7. Top with cooking juices, avocado, and feta.
  8. Serve and Enjoy!
