Ingredients
- 25 oz. potatoes
- 55 oz. artichokes
- 5 tbsp. extra virgin olive oil
- 1 tsp. dry rosemary
- ½ lemon
- a pinch of salt and pepper
Method
- Peel the raw potatoes and then slice them.
- Transfer them into an oven tray, coated with baking paper.
- Drizzle 2 tbsp. of olive oil on top, sprinkle them with rosemary, salt and pepper to taste and then bake them at 400F for about 30 minutes.
- Meanwhile, clean the artichoke hearts and place them in water with juice from half a lemon, until the potatoes are ready.
- After 30 minutes, add the artichoke hearts into the tray along with the potatoes, drizzle the rest of the olive oil on top and resume baking, lowering the heat to 350F.
- Bake for another 30 minutes, making sure to turn the potatoes over at least once, to ensure even cooking.
- Serve immediately.
