When it’s cold outside and need to warm up with a delicious bowl of comfort food, try this recipe. Using simple ingredients, you’ll be able to make a tasty, healthy soup to enjoy while warming up.

Ingredients
- 25 oz. potatoes
- 12 oz. white rice
- 1 white onion
- 5 cups vegetable broth
- 1 tbsp. tomato paste
- 3 tbsp. grated Parmesan cheese
- 1 tsp. dry thyme
- 1 tsp. dry rosemary
- 2 tbsp. extra virgin olive oil
- a pinch of salt and pepper
Method
- Peel the potatoes and then dice them.
- Chop the white onion and then fry it in a pot, in olive oil, until tender. Add 1 ladle of hot vegetable broth, if necessary.
- Next, add the potatoes as well and then add the thyme, rosemary, the vegetable broth and salt and pepper to taste.
- Cook for about 20 - 30 minutes and then add the rice as well.
- Ass the tomato paste, more salt and pepper if necessary, and cook until both the rice and potatoes are done.
- When the soups is ready, mix in the grated Parmesan cheese and serve.
