Ingredients

  • 25 oz. potatoes
  • 12 oz. white rice
  • 1 white onion
  • 5 cups vegetable broth
  • 1 tbsp. tomato paste
  • 3 tbsp. grated Parmesan cheese
  • 1 tsp. dry thyme
  • 1 tsp. dry rosemary
  • 2 tbsp. extra virgin olive oil
  • a pinch of salt and pepper

Method

  1. Peel the potatoes and then dice them.
  2. Chop the white onion and then fry it in a pot, in olive oil, until tender. Add 1 ladle of hot vegetable broth, if necessary.
  3. Next, add the potatoes as well and then add the thyme, rosemary, the vegetable broth and salt and pepper to taste.
  4. Cook for about 20 - 30 minutes and then add the rice as well.
  5. Ass the tomato paste, more salt and pepper if necessary, and cook until both the rice and potatoes are done.
  6. When the soups is ready, mix in the grated Parmesan cheese and serve.
