Ingredients
- 20 oz. potatoes
- 4 oz. leeks
- 4 oz. carrots
- 2 cups milk
- 2 cups vegetable broth
- 2 oz. butter
- 1 tbsp. extra virgin olive oil
- 1 tsp. chopped chives
- 1 tsp. chopped dry thyme
- a pinch of salt and pepper
Method
- Wash, peel and chop the leek and carrots.
- In a large pan, heat up the butter and oil and then fry the chopped vegetables.
- Meanwhile, peel and dice the potatoes.
- When the carrots and leek are tender, scoop some out of the pan and set aside. Add the potatoes on top of the remaining chopped vegetables.
- Cook until the potatoes begin to brown, stirring often.
- Next, add the milk, thyme, salt and pepper to taste and cook with the lid on until the potatoes are tender.
- When the potatoes are done, transfer everything into a food processor and blend. Alternatively, use a hand blender.
- Transfer the creamed soup back into the pan, add the vegetables set aside earlier, the warm vegetable broth and salt and pepper to taste.
- Bring to a boil and cook for about 10 minutes.
- Serve hot, with chopped chives sprinkled on top.
