When you run out of ideas about what to serve for dinner, try this delicious potato soufflé. It’s quick and easy to make and will impress everyone at the table for sure!

Ingredients
- 20 oz. potatoes
- 7 oz. prosciutto
- 1 garlic clove
- 2 eggs
- 2 tbsp. chopped parsley
- 2 tbsp. chopped chives
- 1 tbsp. chopped dry rosemary
- ½ stick butter
- 3 - 4 tbsp. breadcrumbs
- 2 - 3 tbsp. extra virgin olive oil
- a pinch of salt and pepper
Method
- Boil the potatoes in their skin until tender. Peel them and then mash them in a large bowl.
- Mix the mashed potatoes with the spices (rosemary, chives, parsley, salt and pepper to taste), the eggs and the chopped garlic.
- Brush 6 soufflé forms with butter and then coat them with breadcrumbs.
- Fill the soufflé forms with the potato mixture halfway.
- Add a couple slices of prosciutto in the middle, and then cover with more mashed potatoes.
- Sprinkle the remaining breadcrumbs on top and drizzle the soufflés with some olive oil.
- Bake at 30 - 40 minutes at 350F, until done. Serve immediately.
