Ingredients
- 10 oz. potatoes
- 9 oz. all purpose flour
- 4 oz. smoked ham
- 3 tbsp. grated Parmesan cheese
- 7 oz. milk
- 3 eggs
- 1 tsp. instant dry yeast
- 1 tsp. dry thyme
- 2 tsp. extra virgin olive oil
- a pinch of salt and pepper
Method
- Boil the potatoes in salted water, in their skin, until tender.
- Meanwhile, dice the smoked ham and fry it in olive oil, until crisp.
- When the potatoes are ready, peel them and then mash them.
- Mix the mashed potatoes with the smoked ham, thyme, eggs, milk, grated Parmesan, flour, yeast, salt and pepper to taste.
- Transfer everything into a pastry bag.
- Coat a muffin tray with muffin liners (or grease the tray with some olive oil) and then fill each muffin hole with the potato mixture.
- Bake at 350F for about 20 minutes, until done.
- Let the muffins cool down before serving.
