You’re about to find out! With only a few simple ingredients, you can prepare a delicious frittata using potatoes as the main ingredient.

Ingredients
- 6 eggs
- 15 oz. potatoes
- 4 oz. grated Parmesan cheese
- 4 tbsp. extra virgin olive oil
- 1 tsp. chopped parsley
- a pinch of salt and pepper
Method
- Peel the raw potatoes and then slice them thin.
- Bring a pot with lightly salted water to a boil and cook the potatoes for about 5 - 10 minutes.
- When they’re almost tender, drain them well and set aside.
- In a large bowl, beat the eggs with the grated Parmesan, parsley, salt and pepper to taste. Add the potatoes as well and mix gently.
- Fry the frittata in a pan in olive oil, about 10 minutes on each side, until done.
- Serve immediately.
