Ingredients

  • 6 eggs
  • 15 oz. potatoes
  • 4 oz. grated Parmesan cheese
  • 4 tbsp. extra virgin olive oil
  • 1 tsp. chopped parsley
  • a pinch of salt and pepper

Method

  1. Peel the raw potatoes and then slice them thin.
  2. Bring a pot with lightly salted water to a boil and cook the potatoes for about 5 - 10 minutes.
  3. When they’re almost tender, drain them well and set aside.
  4. In a large bowl, beat the eggs with the grated Parmesan, parsley, salt and pepper to taste. Add the potatoes as well and mix gently.
  5. Fry the frittata in a pan in olive oil, about 10 minutes on each side, until done.
  6. Serve immediately.
