Ingredients

  • 35 oz. potatoes
  • 2 raw egg yolks
  • 4 oz. grated Parmesan cheese
  • 2 whole eggs
  • 4-5 tbsp. breadcrumbs
  • a pinch of salt and pepper
  • 4 cups vegetable oil (for frying)

Method

  1. Wash the potatoes and then boil them in their skin, until tender.
  2. When tender, let them cool down and then peel them.
  3. Mash the potatoes in a large bowl and then mix in the 2 egg yolks, grated Parmesan, salt and pepper to taste.
  4. Using your hands, shape about 30 croquettes.
  5. Beat the remaining 2 whole eggs with a pinch of salt and pepper.
  6. Coat the croquettes first with egg wash and then with breadcrumbs.
  7. Deep fry the potato croquettes in hot vegetable oil, until done on all sides.
  8. Serve immediately, while still hot.
