These potato burgers are so easy to make, you’ll probably prepare them more often!

Ingredients
- 23 oz. potatoes
- 2 red onions
- 4 tbsp. breadcrumbs
- 4 tbsp. Grated Parmesan cheese
- 1 egg
- 2 tbsp. extra virgin olive oil
- 1 tsp. dry thyme
- 1 tsp. dry rosemary
- a pinch of salt and pepper
Method
- Boil the potatoes in their skin until tender. Peel them and then let them cool down.
- Meanwhile, chop the red onions and fry them in olive oil. Add 2-3 tbsp. of water as well and cook until they become tender.
- Mash the potatoes and then mix them with the grated Parmesan cheese, thyme and rosemary, salt and pepper to taste.
- Next, add the cooked red onions, egg and breadcrumbs. If needed, add more breadcrumbs into the mix.
- Using your hands, shape 4 burger patties and fry them in olive oil. Fry until done on both sides.
