Ingredients

  • 23 oz. potatoes
  • 2 red onions
  • 4 tbsp. breadcrumbs
  • 4 tbsp. Grated Parmesan cheese
  • 1 egg
  • 2 tbsp. extra virgin olive oil
  • 1 tsp. dry thyme
  • 1 tsp. dry rosemary
  • a pinch of salt and pepper

Method

  1. Boil the potatoes in their skin until tender. Peel them and then let them cool down.
  2. Meanwhile, chop the red onions and fry them in olive oil. Add 2-3 tbsp. of water as well and cook until they become tender.
  3. Mash the potatoes and then mix them with the grated Parmesan cheese, thyme and rosemary, salt and pepper to taste.
  4. Next, add the cooked red onions, egg and breadcrumbs. If needed, add more breadcrumbs into the mix.
  5. Using your hands, shape 4 burger patties and fry them in olive oil. Fry until done on both sides.
