Ingredients
- 25 oz. potatoes
- 10 oz. pasta
- 1 shallot
- 1 tbsp. dry thyme
- 1 tsp. dry rosemary
- 2 tbsp. extra virgin olive oil
- a pinch of salt and pepper
Method
- Bring a pot with lightly salted water to a boil and cook the pasta as per the instructions listed on the package.
- Peel the raw potatoes and then wash and dice them.
- Chop the shallot and then fry it in olive oil. Add the chopped rosemary and salt to taste and cook until tender.
- Next, add the potatoes into the pan and fry until they are cooked on all sides. Stir often.
- When the potatoes start to brown, start adding some liquid, from the pasta’s cooking water, 1 ladle at a time.
- When the pasta and the potatoes are done, mix the pasta directly into the pan.
- Cook for a few more minutes, stirring often, until the dish becomes creamy.
- Add thyme, salt and pepper to taste and serve immediately.
