Ingredients

  • 25 oz. potatoes
  • 10 oz. pasta
  • 1 shallot
  • 1 tbsp. dry thyme
  • 1 tsp. dry rosemary
  • 2 tbsp. extra virgin olive oil
  • a pinch of salt and pepper

Method

  1. Bring a pot with lightly salted water to a boil and cook the pasta as per the instructions listed on the package.
  2. Peel the raw potatoes and then wash and dice them.
  3. Chop the shallot and then fry it in olive oil. Add the chopped rosemary and salt to taste and cook until tender.
  4. Next, add the potatoes into the pan and fry until they are cooked on all sides. Stir often.
  5. When the potatoes start to brown, start adding some liquid, from the pasta’s cooking water, 1 ladle at a time.
  6. When the pasta and the potatoes are done, mix the pasta directly into the pan.
  7. Cook for a few more minutes, stirring often, until the dish becomes creamy.
  8. Add thyme, salt and pepper to taste and serve immediately.
