This recipe is so easy to make, you’ll want to keep the recipe close! Oven baked potatoes make for the perfect meal. They’re easy to make, are very flavored, and make for a great side dish!

Ingredients
- 35 oz. potatoes
- 2 garlic cloves
- 3 tbsp. extra virgin olive oil
- 1 tsp. dry thyme
- 1 tsp. dry rosemary
- a pinch of salt and pepper
Method
- Peel the raw potatoes and then dice them.
- Boil the diced potatoes in lightly salted water for 5 - 10 minutes.
- Transfer the almost tender potatoes into a bowl, mix in the thyme, add salt to taste and drizzle 2 tbsp. of oil on top.
- Use the remaining olive oil to grease a heat resistant tray.
- Transfer the potatoes into the tray, sprinkle rosemary on top and add the 2 garlic cloves as well, leaving them whole.
- Bake the potatoes for about 1 hour at 400F, making sure to turn them over halfway through the cooking process, to ensure even cooking.
- Remove the garlic cloves when done and serve hot.
