Lyonnaise Potatoes
Is a typical French recipe you can cook in your own home. With only a few ingredients, you can prepare a delicious meal every single guest at your table will enjoy.

Ingredients
- 30 oz. potatoes
- 2 white onions
- 2 cups Bechamel sauce
- ½ stick of butter
- 1 tsp. extra virgin olive oil
- 2 tbsp. breadcrumbs
- 1 tbsp. chopped parsley
Method
- Peel the raw potatoes and then slice them.
- Boil the sliced potatoes in salted water for about 15 minutes. Drain them well afterwards.
- Meanwhile, slice the onions and then fry them in oil with 1 tsp. of butter.
- Add 1 ladle of the potato cooking water and cook the onions until tender.
- Brush a heat resistant tray with the remaining butter and then coat it with breadcrumbs.
- Place a layer of potatoes first, then add a layer of onions and then one of Bechamel sauce on top. Sprinkle with chopped parsley.
- Continue with another set of layers, of potatoes, onions, Bechamel sauce and parsley.
- Sprinkle the casserole with salt and pepper to taste.
- Bake at 350F for 15 - 20 minutes, until a crust forms on top.
- Serve immediately.
