Ingredients

  • 30 oz. potatoes
  • 2 white onions
  • 2 cups Bechamel sauce
  • ½ stick of butter
  • 1 tsp. extra virgin olive oil
  • 2 tbsp. breadcrumbs
  • 1 tbsp. chopped parsley

Method

  1. Peel the raw potatoes and then slice them.
  2. Boil the sliced potatoes in salted water for about 15 minutes. Drain them well afterwards.
  3. Meanwhile, slice the onions and then fry them in oil with 1 tsp. of butter.
  4. Add 1 ladle of the potato cooking water and cook the onions until tender.
  5. Brush a heat resistant tray with the remaining butter and then coat it with breadcrumbs.
  6. Place a layer of potatoes first, then add a layer of onions and then one of Bechamel sauce on top. Sprinkle with chopped parsley.
  7. Continue with another set of layers, of potatoes, onions, Bechamel sauce and parsley.
  8. Sprinkle the casserole with salt and pepper to taste.
  9. Bake at 350F for 15 - 20 minutes, until a crust forms on top.
  10. Serve immediately.
