Ingredients

  • Jackfruit (3lbs, fruit extracted)
  • Taco Shells (16, 6 in. shells)
  • Sweet Corn Kernels (2 cups)
  • Sour Cream (1/2 cup)
  • Salsa (1/2 cup)
  • Cilantro (2 tbsp., chopped)

Method

  1. Set your oven to preheat to 350 degrees F. Set your jackfruit to cook for about 7 minutes in the oven.
  2. Wrap your taco shells in aluminum foil and allow to bake for 8 – 10 minutes.
  3. Once done, begin assembly by layering jackfruit and corn. Then topping with sour cream, salsa, and cilantro.
  4. Serve and Enjoy!
