This vegetarian taco will remind you of a juicy cut of pork.

Ingredients
- Jackfruit (3lbs, fruit extracted)
- Taco Shells (16, 6 in. shells)
- Sweet Corn Kernels (2 cups)
- Sour Cream (1/2 cup)
- Salsa (1/2 cup)
- Cilantro (2 tbsp., chopped)
Method
- Set your oven to preheat to 350 degrees F. Set your jackfruit to cook for about 7 minutes in the oven.
- Wrap your taco shells in aluminum foil and allow to bake for 8 – 10 minutes.
- Once done, begin assembly by layering jackfruit and corn. Then topping with sour cream, salsa, and cilantro.
- Serve and Enjoy!
