Ingredients
- 50 oz. potatoes
- 5 oz. grated Parmesan cheese
- 2 oz. extra virgin olive oil
- 1 garlic clove
- 1 tsp. dry oregano
- 1 tsp. dry rosemary
- 1 tsp. dry thyme
- a pinch of salt and pepper
Method
- Wash the potatoes and then cut them hasselback style: insert a skewer into the raw potatoes, lengthwise, and using a sharp knife, slice each potato until you reach the skewer at the bottom (the skewer helps prevent slicing the potato all the way).
- Next, chop the oregano, thyme, rosemary and garlic, mix them with salt and pepper to taste and then add the grated Parmesan cheese.
- Remove the skewers from the potatoes and gently stuff them with the herb mixture.
- Place the potatoes in an oven tray, coated with baking paper, drizzle with olive oil and bake at 400F for about 1 hour - 1 hour and 20 minutes, until done.
