Ingredients

  • 50 oz. potatoes
  • 5 oz. grated Parmesan cheese
  • 2 oz. extra virgin olive oil
  • 1 garlic clove
  • 1 tsp. dry oregano
  • 1 tsp. dry rosemary
  • 1 tsp. dry thyme
  • a pinch of salt and pepper

Method

  1. Wash the potatoes and then cut them hasselback style: insert a skewer into the raw potatoes, lengthwise, and using a sharp knife, slice each potato until you reach the skewer at the bottom (the skewer helps prevent slicing the potato all the way).
  2. Next, chop the oregano, thyme, rosemary and garlic, mix them with salt and pepper to taste and then add the grated Parmesan cheese.
  3. Remove the skewers from the potatoes and gently stuff them with the herb mixture.
  4. Place the potatoes in an oven tray, coated with baking paper, drizzle with olive oil and bake at 400F for about 1 hour - 1 hour and 20 minutes, until done.
