Ingredients
- 1lb. Halibut fillets, cut into 2oz. portion
- 2 tbsp. potato starch
- 1 cup plain flour
- 4 tsp. lime juice
- 1 egg
- 1 tsp. minced capers
- 8 tortillas
- ½ tsp. Ground cumin
- ½ tsp. Dried dill weed, chopped
- 1 tsp. cayenne pepper
- ½ cup yogurt, unflavored
- 1 cup light beer
- 1 tsp. Baking powder
- ½ tsp. Salt
- ½ cup mayonnaise
- ¼ cup vegetable oil
Method
- In a bowl combine the flour, potato starch, baking powder, and salt.
- In a separate bowl combine the beer and egg. Whisk in the flour mix. Place aside.
- Meanwhile, set your white sauce in motion: add your mayonnaise and yogurt in a mixing bowl then slowly stir in the lime juice a little at a time until the mix becomes just slightly runny. Add the spices and jalapeno.
- Set a skillet on over medium heat with your vegetable oil and allow to get hot.
- Once hot deep your fish pieces into your flour mix, then into your beer and egg mix, then back into your flour mix. Next, shake off the excess flour off each piece and add them to your heated oil to cook until heated through and golden brown.
- Set the fish pieces aside on a paper towel to drain the excess oil.
- Begin to assemble your taco by layering halibut, sauce, capers, and dill weed in your taco shells.
- Serve and enjoy.
