Ingredients
- 35 oz. potatoes
- 10 oz. white onions
- 17 oz. tomatoes
- 5 oz. stale bread
- 3 tbsp. grated Parmesan cheese
- 1 tbsp. dry oregano
- 2 tbsp. extra virgin olive oil
- a pinch of salt and pepper
Method
- Peel and slice the tomatoes, onions and potatoes.
- Shred the stale bread and set it aside.
- Brush a heat resistant tray with some olive oil and then add a layer of potatoes on the bottom.
- Add a layer of onions on top and then a layer of tomatoes.
- Drizzle about 1 tbsp. of olive oil on top of the tomatoes and add salt and pepper to taste.
- Cover with shredded stale bread and then continue adding the layers in the same manner: potatoes, onions, tomatoes, olive oil, stale bread.
- When the ingredients finish, cover everything with a last layer, of grated Parmesan cheese mixed with oregano.
- Bake the casserole at 350F for about 1 hour, until a crust forms on top.
- Serve immediately.
