Ingredients
- 5 oz. all purpose flour
- 5 oz. semolina
- 4 oz. potatoes
- 7 oz. water
- 4 tbsp. extra virgin olive oil
- ½ tsp. dry yeast
- 1 tbsp. dry rosemary
- ½ tsp. table salt
- 1 tbsp. kosher salt
Method
- Boil the potatoes in their skin until tender. Peel them and let them cool down afterwards.
- Mash the potatoes and then mix them with the flour, semolina, yeast, water, 2 tbsp. olive oil and table salt to taste.
- Mix until you obtain a smooth dough and then let the dough rest for at least 2 hours, until it doubles in volume.
- Next, spread the dough on your work surface and, using a large cookie cutter (or a glass or a small bowl), cut about 10 small focaccia shapes.
- Separately, in a small bowl, mix together the rosemary, kosher salt and remaining olive oil.
- Brush the focaccias with the mixture and then bake them at 350F, for about 20 minutes, until done.
