These French Duchess potatoes both look and taste delicious. And despite their fancy culinary design, they’re very easy to prepare! With only a handful of ingredients, you can prepare a delicious potato meal for your family and friends to enjoy.

Ingredients

  • 15 oz. potatoes
  • 2 oz. butter
  • 2 raw egg yolks
  • 2 oz. grated Parmesan cheese
  • a pinch of nutmeg
  • a pinch of salt and pepper

Method

  1. Boil the potatoes in their skin, until tender. Let them cool down afterwards and then peel them.
  2. Mash the potatoes in a large bowl and then mix in the butter, egg yolks, grated Parmesan cheese, nutmeg, salt and pepper to taste.
  3. Transfer everything into a pastry bag and shape about 30 Duchess potatoes directly in the oven tray, previously coated with baking paper.
  4. Bake at 400F for 15 - 20 minutes, until done.
