Here’s a good taco recipe that can be made using either freshly cooked or leftover chunks of beef.

Ingredients
- ¼ cup white onion quartered
- Beef (chuck, 1½lbs, trimmed and chunked)
- ½ tablespoon ground cumin
- 1 quartered orange
- 3 garlic cloves, peeled
- ½ tablespoon red peppercorns
- 1 tablespoon salt
- 1 whole bay leaf
- Taco Shells (12, 6-inch, warmed)
- Avocado (1 large, thinly sliced)
- Red Cabbage (1/2 cup, shredded)
Method
- Add all your Ingredients into a large dutch oven, and add enough water to cover.
- Place on high heat and allow it to get to a boil then reduce the heat so that it is just a simmer (about medium heat).
- Skim any foam from the top and cover with the lid.
- Allow it to simmer like this for about an hour and a half.
- Remove from heat and let the pot remain untouched for an hour. This will allow the beef to cool and rest.
- Rough chop the meat and spoon into warm taco shells. Top with avocado slices and red cabbage.
- Serve and Enjoy!
