Here’s a good taco recipe that can be made using either freshly cooked or leftover chunks of beef.

Ingredients

  • ¼ cup white onion quartered
  • Beef (chuck, 1½lbs, trimmed and chunked)
  • ½ tablespoon ground cumin
  • 1 quartered orange
  • 3 garlic cloves, peeled
  • ½ tablespoon red peppercorns
  • 1 tablespoon salt
  • 1 whole bay leaf
  • Taco Shells (12, 6-inch, warmed)
  • Avocado (1 large, thinly sliced)
  • Red Cabbage (1/2 cup, shredded)

Method

  1. Add all your Ingredients into a large dutch oven, and add enough water to cover.
  2. Place on high heat and allow it to get to a boil then reduce the heat so that it is just a simmer (about medium heat).
  3. Skim any foam from the top and cover with the lid.
  4. Allow it to simmer like this for about an hour and a half.
  5. Remove from heat and let the pot remain untouched for an hour. This will allow the beef to cool and rest.
  6. Rough chop the meat and spoon into warm taco shells. Top with avocado slices and red cabbage.
  7. Serve and Enjoy!
