Ingredients

  • 4lb. veal cubed
  • 3 tablespoons sunflower oil
  • 2 onions, diced
  • 2 14oz. can chopped tomatoes
  • 2 15oz. can pimento beans
  • ½ tablespoon dried oregano
  • 4 garlic cloves, crushed
  • 2 tablespoons chipotle paste
  • 1-quart veal stock
  • 1 teaspoon ground cinnamon
  • 1 tablespoon minced ginger
  • ½ tablespoon ground cumin
  • ½ tablespoon all-purpose flour
  • 16, 6-inch warmed taco shells
  • Sour cream (1/2 cup)
  • Cilantro (1/4 cup, chopped)

Method

  1. Heat some oil in a large heatproof dish. Cook the meat in batches, until browned.
  2. Remove the meat and place aside. Heat 1 tablespoon oil and cook the onions for 10 minutes or until caramelized.
  3. Stir in garlic, chipotle paste, ginger, cumin, flour, and cinnamon. Cook for few minutes and add the stock, gradually until combined with other Ingredients.
  4. Add the oregano and tomatoes and cook for 10 minutes.
  5. Add the veal, cover, and simmer for 1 hour and 40 minutes or until tender.
  6. Add the beans in final 15 minutes. Adjust the seasoning before serving.
  7. Spoon evenly into taco shells Top with sour cream and cilantro.
  8. Serve and Enjoy!
