Ingredients
- 4lb. veal cubed
- 3 tablespoons sunflower oil
- 2 onions, diced
- 2 14oz. can chopped tomatoes
- 2 15oz. can pimento beans
- ½ tablespoon dried oregano
- 4 garlic cloves, crushed
- 2 tablespoons chipotle paste
- 1-quart veal stock
- 1 teaspoon ground cinnamon
- 1 tablespoon minced ginger
- ½ tablespoon ground cumin
- ½ tablespoon all-purpose flour
- 16, 6-inch warmed taco shells
- Sour cream (1/2 cup)
- Cilantro (1/4 cup, chopped)
Method
- Heat some oil in a large heatproof dish. Cook the meat in batches, until browned.
- Remove the meat and place aside. Heat 1 tablespoon oil and cook the onions for 10 minutes or until caramelized.
- Stir in garlic, chipotle paste, ginger, cumin, flour, and cinnamon. Cook for few minutes and add the stock, gradually until combined with other Ingredients.
- Add the oregano and tomatoes and cook for 10 minutes.
- Add the veal, cover, and simmer for 1 hour and 40 minutes or until tender.
- Add the beans in final 15 minutes. Adjust the seasoning before serving.
- Spoon evenly into taco shells Top with sour cream and cilantro.
- Serve and Enjoy!
