Ingredients
- Canola Oil (3 tbsp., for grill)
- Garlic (1 clove, mashed to a paste)
- Olive Oil (2 tbsp.)
- Chili Powder (1 tbsp.)
- Cumin (1 tsp., grounded)
- Oregano (1tsp., dried)
- Salt (1/2 tsp.)
- Black Pepper (1/4 tsp.)
- Lobster (1lb., fresh meat)
- Corn Tortillas (8, 6-inch)
- Pineapple – Jalapeno Salsa (1 Cup)
Method
- Set your grill on to medium-high, while heating uses your wire brush and ensures that the grill is clean.
- In a medium bowl combine lobster, garlic, olive oil, oregano, cumin, chili powder, salt, and pepper. Toss so that the lobster becomes evenly coated.
- Oil, the grill grate, using the canola oil you had set aside, then immediately set your lobster on your grill to cook until opaque (about 2 minutes for each side)
- When done, add your tortillas onto the grill to achieve grill marks on both sides (about 20 seconds for each side). Set aside and prepare your lobster.
- Begin assembly by layering lobster and pineapple – jalapeno salsa in each tortilla.
- Serve and Enjoy!
