Ingredients

  • Canola Oil (3 tbsp., for grill)
  • Garlic (1 clove, mashed to a paste)
  • Olive Oil (2 tbsp.)
  • Chili Powder (1 tbsp.)
  • Cumin (1 tsp., grounded)
  • Oregano (1tsp., dried)
  • Salt (1/2 tsp.)
  • Black Pepper (1/4 tsp.)
  • Lobster (1lb., fresh meat)
  • Corn Tortillas (8, 6-inch)
  • Pineapple – Jalapeno Salsa (1 Cup)

Method

  1. Set your grill on to medium-high, while heating uses your wire brush and ensures that the grill is clean.
  2. In a medium bowl combine lobster, garlic, olive oil, oregano, cumin, chili powder, salt, and pepper. Toss so that the lobster becomes evenly coated.
  3. Oil, the grill grate, using the canola oil you had set aside, then immediately set your lobster on your grill to cook until opaque (about 2 minutes for each side)
  4. When done, add your tortillas onto the grill to achieve grill marks on both sides (about 20 seconds for each side). Set aside and prepare your lobster.
  5. Begin assembly by layering lobster and pineapple – jalapeno salsa in each tortilla.
  6. Serve and Enjoy!
